As discussed, There is a 3rd party tool that we can integrate into your existing website, which would cost $350 CAD per year (that covers free upgrades, support, etc). This tool would allow us to add a customer-friendly (and staff-friendly) booking interface to the website. It can integrate with your existing Google Calendar(s) for availability, allows people to see availability an dbook time slots. You can control min/max time slots, customers can change time slots automatically (everything will update on the backend) etc.

With this installed I can set up an eCommerce back-end which would allow the customers to have accounts for re-booking, and will take them through the "checkout" process (ie, allow them to pay by credit card).

We'd need to set you up with a Stripe account (FREE) to accept credit card payment. Stripe will deposit funds right into your bank account, after it subtracts their processing fees (usually about 2.9% of the amount charged to the card, plus 30 cents per transaction.

I figure all this would take me about 12-16 hours, at my rate of $38.25/hr ($85 - 55%). So ALL in anywhere from $809 to $962 (including the first year of the 3rd party plugin that I would purchase).
